
BEAN & HAM SOUP

INGREDIENTS:
1 Ham bone from left over ham for the holidays(hehe)
1 pkg Northern Beans or White Navy beans
1 Onion (chopped)
3 (or more per taste) Boullion Cubes(i use ham ones)
1 small can Tomatoes (chopped)
3 Cups water
DIRECTIONS:
Put it all in slow cooker for about three hours till beans are tender
Get Bowl and Spoon ready...Enjoy!!

CHICKEN & CORN SOUP

INGREDIENTS:
6 Cups Water
1 small Onion, quartered
2 Tsp or 2 Cubes Chicken Boullion
1 Tsp Garlic
1 Tsp Dried Parsley
6 Chicken Thigh Fillets
2 Cans Cream Corn
Ham, chopped (leftover or sandwich)
Green Onions (chopped)
DIRECTIONS:
In large stockpot combine your water, onion, boullion, garlic, parsley and chicken.
Bring to a boil then cover and simmer on low for 15 minutes.
Strain out chicken and onion reserving broth. Return broth to pan. Chop your chicken, ham and green onions.
Return chicken, ham, onions to broth. Add creamed corn. Reheat to eat.
Takes about a 1/2 hour from start to finish. Simple ingredients, minimal chopping.

CHILI

INGREDIENTS:
1 Lb. Ground Round or Sirloin Hamburger
1/4 Cup Onion(chopped)
1 Can Chili Beans
1 Can Dark Red Kidney Beans
1 Can Black Beans
1 Pkg Chili Seasoning
1 Lg Can Tomato Juice
1 Tsp Garlic Salt
DIRECTIONS:
Using large pot combine hamburger, onions, garlic salt.. cook til browned. Add your chili seasoning to your hamburger and stir.
Stir your chili, kidney and black beans (drained) in with the meat and seasoning... then add tomato juice. Cook on medium heat
for about 2 hrs or until beans are soft.

FIREHOUSE BLACK BEAN & CHICKEN CHILI

INGREDIENTS:
3-4 Tsp Olive Oil
1 Large Onion
2 Lbs boneless, skinless chicken breast, cut into 1/2 inch pieces
1/2 Cup Chili Powder (or to taste)
4 Cloves garlic (finely minced)
4 (15 oz)Cans Black Beans (rinsed & drained)
4 (15 oz)Cans Diced Tomatoes ( I've also used stewed or Jalapeno tomatoes)
2 (15 oz)Cans Hot Chili Beans
2 (8 oz)Cans Tomato Sauce
3 Cups Frozen Corn
3 Bell Peppers diced (mix em up, green, red, orange or yellow for color)
1/2 Cup Cilantro leaves (chopped)
Salt & Pepper to taste
DIRECTIONS:
Heat Olive Oil in large pot. Add Onion; cook until almost clear & tender. Add chicken, chili powder and garlic, cook, stirring until
chicken is lightly browned. About 3 -4 minutes. Stir in Black Beans, Tomatoes, Chili Beans and Tomato Sauce. Heat to a simmer over low/medium heat.
Lower and cook covered for about 20-30 minutes.
Add corn, bell peppers and cilantro, cook until heated thru and veggies are tender but crisp, about 7 minutes.
Taste, add salt and pepper to taste. I've also added a few dashes of Mc Ilhenney tabasco sauce.
Makes about 10-12 servings. Serve with multi-colored Tortilla chips or add crushed to each bowl, delicious!

HOBO STEW

INGREDIENTS:
1 Propane Turkey Cooker
3 Lb pkg of Smoked Sausage
5 lb bag of Potatoes
1 doz Ears of corn
1 Empty big pickle jar (cleaned)
DIRECTIONS:
Put your potatoes into bottom of the turkey cooker, and place your sausage on top of the potatoes.
Add enough water to cover potatoes, and add corn (still in husks).
Place lid on turkey fryer.
Cook until potatoes are done Aprox 30 - 45 min's
Put melted margerine or butter in pickle jar, keep in a warm place so it stays melted.
When you take the food off the burner remove corn, pull husks back and dip in pickle jar.
Enjoy!!

POOR MAN'S STEW

INGREDIENTS:
1 Lb. Ground Beef
4 Medium Potatoes
1-15oz can Tomato Sauce
1-15oz cut Green Beans (drained)
Salt and Pepper (to taste)
DIRECTIONS:
Crumble and saute ground beef...Drain.
Peel and dice potatoes in small cubes. Add salted water to cover potatoes well and cook until tender.
Drain but DO NOT throw out the water. Put potatoes back in the pot with the water.
Add cooked beef and tomato sauce. Season with salt and pepper to taste.
You can also add some cooked sliced carrots and I also thicken it a bit with a cornstarch paste
(which is 50% cornstarch and 50% cold water mixed well).

POTATO SOUP

INGREDIENTS:
6 Potatoes (diced)
1 Tbsp Butter or Margerine
1 Can Cream Corn
1 Can Evaporated Milk
1/4 Cup Onion (diced) **optional
Pepper (season to your taste)
Salt (season to your taste)
DIRECTIONS:
Place potatoes and onion in a medium size pot, fill with water just enough to cover your potatoes and boil. Do not add or drain water, it will look milky due to the
starch. When potatoes are done add the rest of the ingredients in and lower heat. Let it cook on low for about 15-20 minutes.
